Apple Strudel

A timeless apple and pastry desert. If you prefer you can substitute half of the apple below with pear. Delicious served with cream, vanilla custard or creme fraiche.

Ingredients
1 lb / 450 g apples, peeled cored and grated
2 tbsp lemon juice
3 oz / 75g caster sugar
2 oz / 50g sultanas
2 oz / 50g currants
3 oz / 75g fresh breadcrumbs
8 - 10 sheets of ready made filo pastry
3 oz / 75 g butter, melted
icing sugar, to dust
Herbs & Spices
1 tsp Cinnamon Ground
1 tsp Mixed Spice
Cooking Instructions
Preheat the oven to 180C/350F/gas mark 4.

Mix the apples, lemon juice, sugar, currants, sultanas, breadcrumbs and spices in a big bowl. Brush each rectangular sheet of filo pastry with butter and lay one on top of another. Spread the apple mixture over 2/3 of the pastry, leaving a strip along one long side uncovered. Carefully roll up the strudel into a sausage, starting from the side covered in filling. Carefully transfer the strudel onto a greased baking tray and brush with butter. Place in the preheated oven and back for 30 minutes or until golden brown. Allow to cool a little, then dust with icing sugar and serve.
