Hummus

A classic chickpea, sesame and lemon dip. Everybody has their own preferred hummus recipe. The quantities below are a guideline, and you should adjust the quantity of tahini and lemon juice to suit.

Ingredients
1 tin chickpeas plus the liquid
4 tbsp good olive oil
1 large clove of garlic, crushed
4 tbsp tahini
4 tbsp lemon juice
salt and pepper seasoning
Herbs & Spices
1 tsp Paprika
Cooking Instructions
Put the tinned chickpeas in a food processor along with the garlic, tahini, lemon juice and half of the oil and 1/3rd of the chickpea liquid. Blend the dip. adding more of the chickpea liquid and more oil if necessary to produce a thick dip of your preferred consistency (some people prefer a more crunchy texture, others prefer a puree, in which case blend for longer). Season generously with salt and pepper, and mix in well. Taste, and adjust flavour using a bit more lemon juice if necessary. Add paprika and stir in well. Pour into a serving dish and drizzle 1 tbsp of olive oil on top.
