A spicy tomato based dip, great served with tortilla chips as a starter

Ingredients1 onion, finely chopped
1 lb / 450 g ripe tomatoes
6 tbsp lemon or lime juice
6 tbsp olive oil
small bunch of fresh coriander, chopped
Herbs & Spices1 tsp Mexican Salsa Mix
Cooking InstructionsChop the tomatoes in half, scoop out the seeds and discard. Chop the outer flesh finely and place in a bowl with the chopped onion and chopped coriander.
In a glass or a jam jar stir or shake up the lemon/lime juice, olive oil and the salsa mix. Pour over the tomatoes and mix thoroughly.
Serve as a dip with corn chips or as a side accompaniment to a main course.
