Molho de Piri Piri (Portuguese hot red pepper dressing)

A classic hot pepper dressing, perfect as a side seasoning for meat, fish and vegetables when a clean hot 'kick' is required.
*** fresh chillies
8 fl oz / 225 ml olive oil
2 1/2 fl oz / 65 ml cider vinegar
1 tsp salt

Cooking Instructions
Chop the chillies (include the seeds) finely. Place in a large clean glass bottle or jam-jar. Add the *********, oil, vinegar and salt. Seal and shake well.

The dressing will keep at least a month in the fridge. Shake well before use.
